Kitchen extraction cleaning exists because of fire risk and insurance, not appearance. Grease accumulation in ductwork is a documented hazard, and the output of the work is a certificate.
Scope is driven by compliance intervals rather than by how the canopy looks.

- Kitchen canopy, filter and plenum cleaning
- Extract ductwork to full length where accessible
- Fan housing, impeller and discharge cleaning
- Supply air ductwork and AHU internals
- Access panel installation where none exists
- Certification and photographic evidence for insurers

What the certificate has to show
The deliverable is the documentation. An insurer or fire officer asking for evidence expects to see all of it.
- Pre- and post-clean photographs at every access point
- Deposit thickness measured and recorded before and after
- Extent of ductwork cleaned, and any section that could not be reached
- Access panels installed, with their locations recorded
- Date, operatives and next due date
- Any defect found — damaged ductwork, failed fans, missing fire dampers
